Did you know ginger is excellent for aiding good digestion? That’s why the Chinese use it in so many of their foods, and here’s a more simple way to use ginger. This salad is a hit every time it’s served!

In large salad bowl, combine:
2 Tablespoon soy sauce or Braggs liquid aminos
2 Tablespoon olive oil
1 Tablespoon apple cider vinegar
1/2 teaspoon garlic powder
1/4 teaspoon salt
4 drops lemon essential oil
2 drops ginger essential oil

Stir in
1 cup cooked and chilled brown rice
1 cup cut-up broccoli florets
1 cup sliced shiitake mushrooms

Layer on
1/2 cup snow peas, halved
1/2 cup diced red pepper
1/2 cup sliced celery
3 green onions, sliced
3 cup chopped green leaf lettuce
1/2 cup sliced raw almonds

Chill without stirring until ready to serve.

Toss well just before serving. Yummy salad!
