Perfect treat for fall parties!
These are a nutty, melt in your mouth kind of treat, and the best part is that cinnamon and ginger are excellent for balancing blood sugar and supporting good digestion – you’ll love the flavor and the benefits!
In mixing bowl, combine:
1/4 cup coconut oil
1 1/2 cup cooked or canned pumpkin
1 cup honey
Mix well until creamy and blended well.
2 cup whole grain flour
(for gluten-free: equal parts whole oats & brown rice flours, packed lightly)
2 tsp. baking soda
1/2 tsp. salt
4 drops cinnamon essential oil
2 drops ginger essential oil
1 drop clove essential oil
1 cup chopped pecans
Mix well again until thoroughly mixed.
Spread mixture on a greased 12″ x 17″ pan
Bake for approx. 25 minutes at 350°.
Cut into squares or bars to serve.
