Would you like to have super tasty foods this summer that are healthy and require little preparation?

Like you, I’m always super busy! So, these are the 4 criteria for my favorite summer foods:

  • Fresh! Must have fresh vegetables or fruits to keep me hydrated, thin, and cool
  • Whole! This way I get all nature intended to offer my body
  • Simple! With as little cooking as possible
  • Tasty! Essential oils are the secret sauce here and doTERRA’s oils are guaranteed safe for internal consumption….you’ll LOVE the flavors!

What most people don’t know is that essential oils provide AMAZING internal benefits….look at this list!

  • And add yummy flavors to many foods!
  • Here are some of my favorites examples…..you will LOVE ALL of them!

    QUICK & EASY WRAPS 

    • corn tortillas (non-GMO, I get mine from Trader Joes)
    • olive or coconut oil
    • fresh cooked or packaged chicken, shredded
    • 1-3 drops doTERRA Lime essential oil (to taste)
    • 1 drop doTERRA Cumin or Coriander essential oil
    • chopped lettuce or spinach leaves
    • sliced tomatoes or sliced red peppers
    • avocado slices
    • hot sauce or salsa
    1. With pastry brush, coat each top of tortilla with oil and stack, press, then broil or convection bake 2-3 min
    2. Heat chicken in saucepan just to warm; add essential oils and toss
    3. Prepare other ingredients as indicated
    4. Fill ingredients in wrap as desired and enjoy!

     

    CILANTRO-LIME SPINACH SALAD

    • 2 handfuls fresh spinach leaves
    • 1/2 cucumber, cut in half lengthwise and sliced
    • 1 large tomato, cut into thin wedges
    • 1/2 cup fresh cilantro (leaf & tender stem)
    • 2 eggs, hard boiled and quartered  OR 1 cup cooked beans (optional)
    • 1/4 sunflower seeds
    • 2 Tbs olive oil
    • 1 Tbs apple cider vinegar
    • 10 drops doTERRA Lime essential oil
    • 1 drop cumin essential oil or 1/4 tsp ground cumin
    • 1 garlic clove, pressed or finely chopped
    • 1/2 tsp salt
    • freshly ground pepper to taste
    1. In large salad bowl, layer spinach, cucumber, tomato, cilantro, onion, eggs/beans if using, and seeds
    2. *Combine all other ingredients in a small bowl
    3. Pour on top of the spinach mixture and mix lightly but do not toss. Enjoy!

     

    CASHEW FRUIT DIP

    Cashew dip is sweet, smooth and creamy.

    • 1 can coconut milk (not lite, not boxed)
    • 1 cup raw cashew pieces
    • 3 Tbs. honey
    • 2 Tbs. coconut oil (or other cold-pressed oil)
    • 1 tsp. vanilla
    • 8 drops doTERRA Lemon or Wild Orange essential oil
    1. Place all ingredients in blender and blend very smooth, 2-3 minutes
    2. Chill well to set
    3. Use as a dip for apple wedges, pear wedges, whole strawberries, fresh pineapple wedges, whole grapes, etc. OR use this on top of crepes or shortcake in place of whipped cream!

    YOGURT PARFAITS

    • 16 oz. vanilla yogurt (I use coconut milk yogurt)
    • 5-6 drops doTERRA Lemon, Wild Orange or Citrus Bliss ess/oil
    • Fresh cut fruit and/or berries
    • Sliced almonds
    • Granola
    1. Stir oil of your choice into yogurt
    2. Prepare fruit mixture
    3. In cups or parfait glasses, layer spoonfuls of yogurt, fruit, almonds, granola then repeat. Enjoy!

    ALMOND BUTTER FUDGE

    • 16oz jar raw almond butter
    • 2 Tbs coconut oil
    • 1/2 cup raw honey
    • 3/4 cup doTERRA V-shake (vegetable based protein)
    • 4 drops cinnamon essential oil
    • 8 drops Wild Orange essential oil
    • 2 drops Ginger essential oil
    • 1/2 cup raw seeds or nuts (pumpkin,  sunflower, sesame, chopped  pecans, or combo)
    1. Mix all ingredients (room temperature) together in a  bowl until smooth and creamy
    2. Transfer the mixture to a square baking dish lined with wax paper, then smooth with a spatula and freeze  or chill well.
    3. Cut into squares to serve.
    4. This is a great afternoon pick-me-up, and all it takes is a couple of 1 inch squares to satisfy you.Variations:
      Almond Butter Bars – Add 2 cups rolled oats
      Almond Butter Crispy Bars – Add 2 cups crushed brown rice cakes, and if desired, replace the seeds/nuts with goji berries, raisins, currants, etc.
